BEEF OFF THE FARM-WHAT ARE MY OPTIONS?
INDIVIDUAL packages ($ per pound) of steak, ground beef, roasts and the like.
SAMPLER BEEF BOX ($150 non-refundable deposit required)
$6.00/lb and feature a mix of cuts which typically include roasts, steaks, burger, shanks, stew meat, short ribs, fajita steaks, etc. $300 for a 50 lb. box.
are sold at $5.50/lb. hanging weight with a $250 non-refundable deposit. The yield, or final weight will be roughly 60-65% of the hanging weight.
HALF BEEF are sold at special bulk pricing of $5.00/lb. hanging weight and are pre-sold with a $300 non-refundable deposit.
The final balance due will be determined after the animals have been taken for butchering.
HANGING WEIGHT VS. TAKE HOME WEIGHT
Live, Hanging and Take Home Weights. What's the Difference?
1) “Live” weight: What the animal weighed on the hoof, or when it was alive. Example: A steer's live weight 1200 pounds give or take.
2) “Hanging” weight: the weight after the animal has been taken back to the butcher shop to hang minus blood, head, hide, hooves, viscera, lungs and heart. About 40% of the live weight. So, a 1200 lb animal would have a hanging weight of 720 lbs (estimated). (A half share would then be 360 lbs, and a 1/4 would be 180 lbs).
3) “Final” or “Take-home” weight: the weight of the meat that the customer will take home. About 60-65% of the hanging weight. So for a 180 lb quarter share, the final weight would be about 108-117 lbs (estimated).
The weight is lost in 2 ways. About 4% is water weight lost during the 10-14 day period that the carcass is hung (or “cured”). Then about another 30-35% is lost during the cutting process. This amount is variable based on 2 factors – one is the amount of fat in the meat, and the other is the cuts that a customer requests. Higher fat means more loss. (Grass-fed beef animals tend to be lower fat, so the loss tends to be closer to 35%.) Also , the more boneless cuts requested by the customer, the lower the final weight. (Note that the lower weight doesn’t mean that you are receiving less meat – rather, you are receiving fewer bones). Example: Off the farm or farm-raised beef let's say 180 lb quarter share of beef would range from $6.60-8/lb (for final weight). This is about 40 to 60% less than what you would pay if you purchased grass-fed beef by the cut from retail outlets.
HOW MUCH WILL I GET?
How an animal is butchered can dramatically affect the yield. Whether bones are left in, how closely the butcher trims the surface fat, and how much fat is left in the ground meat is a big part of what determines the yield. The yield is typically 60-65% of the hanging weight so depending on the size of the animal, you can expect approximately:
-QUARTER: 75-100 lbs
-HALF: 140-185 lbs of finished cuts.
HOW MUCH SPACE DO I NEED TO STORE MY MEAT?
Usually a half beef takes up about 10 cu. ft. of “upright” freezer space.
HOW DO I GET MY BEEF?
The customer is responsible for the timely pick up of the ordered beef.
WHEN WILL MY BEEF BE READY?
You will be notified approximately two (2) weeks before your order is fulfilled.You will receive a specified pickup date/time. Pickup dates and times are firm. Optional delivery available with prior arrangements. You or your agent must pick up the meat as agreed with the butcher/processing company. The processing company does not authorize storage of the purchased beef beyond the specified pickup time.

Meat falls off the bone while cooking, (more edible meat) resulting in more flavorful meat.
WHAT ABOUT FAT?
The butcher leaves less fat on the cuts and less fat in the ground beef opting for 85-90% lean ground beef.
WHAT CUTS CAN I EXPECT?
-Steaks, both large and small are cut approximately one inch (1”) thick and two (2) per package.
-Roasts, approximately three to four pounds (3-4 lbs, feeds a family of four with leftovers). Roast sizes vary depending on size of the animal. The butcher will determine the best way to process the meat into roasts that maximize the yield.
-Stewing and Ground Meat, packaged in one to two pound (1 or 2 lb.) packages.
In collaboration with our butcher the best way to cut the beef halves to yield the highest quality, quantity and variety includes the following cuts:

• Shoulder/Rump Roasts
• New York Strip Steaks
• Chuck Roasts
• Sirloin Steaks
• London Broil Steaks
• Shanks, or Soup Bones

• Stew Meat,1 or 2 lb. pkgs
• Ground Beef,1 or 2lb. pkgs
• Top and Bottom Round Roasts
• (optional) Liver in 1 lb. pkgs

Please note: Each animal only has one heart, one tongue and one tail. We will do our best to provide these items to those customers who request them, but keep in mind that you are sharing a half with another customer, as such, there are no guarantees that you will receive all of the above, with the exception being liver, which will come sliced and in 1-2 lb. packages.
WHEN AND HOW DO I PAY FOR THE BEEF?
A deposit is required to hold your beef. You will receive notice of the balance due, based on the animal’s hanging weight. All balances are due, paid in full, to 3JFarmsOK before or at time of pickup.
CAN I HOST A SINGLE DROP WITHOUT A REOCCURRING MONTHLY SCHEDULE?
Yes. There is flexibility to host a one-time drop site at your house. There are some restrictions, so please contact us for details on how to get started.

WHEN DO I NEED TO PLACE MY ORDER?
The deadline to place your order is on Thursdays, which is 5 days prior to your Tuesday drop site delivery date.
WHAT HAPPENS IF I PLACE AN ORDER AFTER THE DEADLINE?
We will do everything possible to fill a late order. There is a $5 late fee.
DO I HAVE TO BE AT THE DROP SITE AT THE EXACT TIME?
Yes, we ask for you to arrive on time at the specific time and place. We value everyone's time and must keep to our schedule to make sure we are on time for the following drop site times.
I CAN'T MEET AT THE DROP SITE THIS TIME THIS MONTH. CAN I STILL GET AN ORDER?
At most drop sites, we have flexibility to leave your order with the host, or we can arrange for a cooler to be left in advance. Please ask in advance and see if other arrangements can be made.

HOW MUCH IS DELIVERY? WHEN IS IT CHARGED?
Orders under 10lbs are charged .55/lb and orders over 10lbs are charged .35/lb. This fee will be added to your total.
CAN SOMEONE ELSE PICK UP MY ORDER?
WHY WAS I CHARGED A DIFFERENT AMOUNT THAN THE ESTIMATED TOTAL AT THE TIME OF CHEK OUT?
We charge by the pound and adjust your order total to exactly what you receive. Your final invoice amount is usually sent to the email address you provided on the day before your drop site delivery.
